Why eating American wheats gives you Celiacs Disease; but in Italy you can eat wheat with no issue

So first what is Celiac disease?

According to The Cleveland Clinic, it’s –

Celiac disease is an inherited autoimmune disorder that causes a reaction in your body to the protein, gluten. Gluten in your digestive system triggers your immune system to produce antibodies against it. These antibodies damage the lining of your small intestine (the mucosa). Damage to the mucosa in your small intestine impairs its ability to absorb nutrients from your food, causing nutritional deficiencies.

Yes, it’s factual that most wheat grown in the U.S. (about 60%) is a hard red wheat with high protein & gluten content. But in Europe, the majority of wheat grown is soft wheat, which is lower in protein and gluten content.

In America, we have a whole subculture of gluten intolerance in the form of support groups, magazines, cookbooks, and websites.

Ok, we know American wheat is harder to digest. But is Celiac disease really a gluten issue?

If this is true, why are there so many Americans making videos on TikTok who have gluten issues and intolerance, but when they eat wheat products in Italy, France, or Greece they have no digestive issues at all? Look at this TikTok video done by CurvyThinking.

So then what is it about American wheat, that is causing so many people allergic and “autoimmune issues”?

Well, it boils down to one thing “Glyphosate”!

Glyphosate according to Penn State University, is –

Glyphosate is a common herbicide (“weed-killer”) used in crop and non-crop lands, including residential areas such as home lawns and gardens. Glyphosate was first registered in the United States in 1974 as the active ingredient in Roundup but is now available in many commercial herbicide products. There is currently increased concern about glyphosate impacts on human health, including risks of cancer.

What are the known detrimental health implications of Glyphosate?

In 2015, the World Health Organization’s International Agency for Research on Cancer (IARC) concluded that “Glyphosate is probably carcinogenic to humans”.

The research article “Toxic Effects of Glyphosate on the Nervous System: A Systematic Review“, concludes-

it is unequivocal that exposure to glyphosate produces important alterations in the structure and function of the nervous system of humans, rodents, fish, and invertebrates

Lastly, the research article “Glyphosate, pathways to modern diseases II: Celiac sprue and gluten intolerance” concludes-

In this paper, we have systematically shown how all of these features of celiac disease can be explained by glyphosate’s known properties. These include (1) disrupting the shikimate pathway, (2) altering the balance between pathogens and beneficial biota in the gut, (3) chelating transition metals, as well as sulfur and selenium, and (4) inhibiting cytochrome P450 enzymes. We argue that a key system-wide pathology in celiac disease is impaired sulfate supply to the tissues, and that this is also a key component of glyphosate’s toxicity to humans.

So what does this have to do with European vs American wheat products?

In America, Glyphosate is used as a pretreatment in the soil for wheat cultivation. Now Glyphosate is not banned in the E.U., but in Italy, Italian health authorities have placed tight restrictions on glyphosate and it is banned from use on wheat. What is unfortunate is there are Italian food conglomerates who import wheat from Canada which has been pre-treated with glyphosate. But there’s light at the end of the tunnel, Wheat imports from Canada to Italy have drastically slumped since 2018, because of the health concerns surrounding glyphosate.

According to The Organic & Non-GMO Report, you need to watch out for these brands of Italian pasta-

Laboratory tests have detected glyphosate, the main ingredient in Bayer’s Roundup herbicide, in seven brands of Italian spaghetti, according to the Italian food industry website il Salvagente.

Tests were conducted on 20 brands of spaghetti and traces of glyphosate were found in seven of them. The brands testing positive were Divella, Esselunga, Eurospin, Garofalo, Lidl, Rummo, and Agnesi. All the brands except Agnesi were made with wheat from outside of Italy, most likely from Canada.

Also which is unfortunate, as of July 2023, Environmental groups have slammed the verdict ‘shocking,’ and accuse it of pro-industry bias as the European Food Safety Authority deemed Glyphosate safe for use in agriculture.

So the powerful corporate lobby of the machines of poison, are slowly breaking down E.U. protection barriers. It’s possibly only a matter of time before the Europeans will be as fat and sick as Americans.

So what do you need to do, especially if you have Celiac disease?

Stop eating American wheat products, unless you use organic wheat. But even if you use organic American wheat it’s harder to digest which can still potentially cause you digestive issues. Use imported “preferably organic” flour and wheat products from Italy. Glyphosate doesn’t stop with wheat. It’s used in all of the GMO food products. Eat organic as much as possible, and learn to cook if you do not know how to already. Avoid processed foods like the plague, they all have GMO’s unless it’s organic.

Or if you can afford it, move to the Mediterranean or any glyphosate-safe region, in particular Italy, and problem solved.
